Weekend Breakfast

Almost every weekend Joe makes breakfast. Made from scratch Oatmeal Pancakes with Blueberry Sauce is one of his specialties. We love them so much that I want to share the recipe with you.

Oatmeal Pancakes

In a bowl combine:

  • 1 cup regular rolled oats
  • 1 cup whole wheat flour
  • 1/4 cup wheat germ
  • 1/4 cup dry milk powder
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 Tablespoon brown sugar

In another bowl, combine:

  • 2 eggs (lightly beaten)
  • 2 cups buttermilk
  • 4 tablespoons butter (melted and cooled)

Add all at once to dry ingredients and stir until well blended.

Preheat a griddle or large frying pan over medium heat; grease lightly. Spoon batter, about 1/4 cup for each cake, onto griddle; spread batter to make 5 inch circles. Cook until tops are bubbly and appear dry; turn and cook other sides until lightly browned. Makes 16 pancakes. (185 calories each)

Blueberry Sauce

In a pan, combine:

  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 2 cups fresh or frozen and blueberries
  • 2 tablespoons lemon juice
  • 1/3 cup water

Cook over medium heat, stirring until mixture thickens. Serve warm or cold over pancakes. Makes 2 cups. (2 tablespoons = 29 calories)
