French Plum Pie Recipe
Artist eats pie! A French plum recipe for you to try....
One of the nice things about the end of summer is fruit trees are loaded with plump fruity goodness begging to be baked into pie, don't you think? We have a French plum tree outside our back door with the sweetest plums I've ever tasted and that's just what we did this last weekend....baked a French plum pie.
Here is our favorite pie recipe. You can use different types of fruit, whatever is available to you such as blackberries, peaches, apples etc.
My DH* is the pie baking expert in our family. He can put one together in almost 15 minutes when it would take me 3 times as long at least. I picked and pitted the plums and he made the pie. What a deal! His secret ingredient to making delicious pie crust is using coconut oil instead of regular shortening.
French Plum Pie
Preheat oven 375°
Pie Crust:
- 2 c unbleached pastry flour (Bob' Red Mill is the best)
- 1/4 t salt
- 2/3 c extra virgin coconut oil
- 7 T cold water
In a medium bowl combine flour and salt. Add the coconut oil. Mix with flour until crumbly. Add cold water one tablespoon at a time. Form dough into a ball and then divide in half. Roll out each half on a floured board with a rolling pin. Line the first half of the dough into a 9" pie pan. Save the second rolled out dough for the pie lid.
Pie Filling:
- 4 c pitted French plums
- 1/2-3/4 c sugar
- 1/4 c flour
Combine plums, sugar and flour. Start with half a cup sugar, then add more depending on your taste. Add filling to crust lined pie pan, then lay the second rolled out dough to the over the top of filling.
Seal the edges by pinching top and bottom dough layers together in a flute design,. Slice air holes into the dough lid with a sharp knife and place in heated oven for 50 minute or until crust is golden brown. Let pie cool before slicing.
My favorite topping is a dollop of plain Greek yogurt...Yumm!!! What's your favorite pie topping?
